Granola {Without Oil}
This granola recipe uses rolled oats and sliced almonds, sweetened with brown sugar and honey but contains no added oil. A cinnamon-spiced syrup made from brown sugar, honey, water, and cinnamon coats the oats and almonds before baking. The granola bakes until lightly golden and is then cooled to allow clusters to form, producing a crunchy texture. It provides a naturally sweet and nutty option without extra fat, suitable for breakfast or snacks.
Ingredients
- 4 cups (368g) rolled oats don't use quick oats, old fashioned
- 1 cup (150g) almond sliced or slivered
- 1/2 cup (100g) light brown sugar packed
- 1/4 cup (60ml) honey
- 2 Tbsp (30ml) water
- 1 1/4 tsp ground cinnamon
- 1/4 tsp salt
- 1 tsp vanilla extract
- 1/4 tsp baking soda
Instructions
- Preheat oven to 300 degrees. In a large mixing bowl, toss together oats and sliced almonds, set aside.
- In a medium saucepan, combine brown sugar, honey, water, cinnamon, and salt. Bring mixture to a boil stirring frequently. Once mixture reaches a boil, allow to boil for 1 minute whisking constantly.
- Remove from heat, stir in vanilla and baking soda and whisk until mixture is foamy. Carefully pour hot sugar mixture over oat mixture and toss to evenly coat.
- Spread mixture into an even layer on a silicone baking mat or parchment paper lined 18 by 13-inch rimmed baking sheet.
- Bake in preheated oven, about 36 - 40 minutes until lightly golden brown, removing from oven and tossing twice during baking*.
- Remove from oven allow to cool completely then break into clusters (note that granola wont be crisp until cooled). Store in an airtight container.
Notes
- When tossing the granola during baking, move oats from edges to the center and spread center to edges to ensure even cooking.
- Optional: Add 1 cup dried fruits like blueberries, cranberries, or raisins after baking for extra flavor and texture.
