The Granola {Without Oil} recipe uses old-fashioned rolled oats and almonds combined with a browned syrup made from light brown sugar, honey, water, cinnamon, salt, vanilla, and baking soda. The syrup is boiled briefly to dissolve and blend flavors, then added hot to the dry ingredients to evenly coat them. Baking at a moderate temperature with occasional tossing encourages even toasting and browning, resulting in a granola that develops clusters as it cools. The absence of oil leads to a lighter but still crunchy end product. This granola can be enjoyed with milk, yogurt, or as a topping for desserts.   • 4 cups (368g) rolled oats don't use quick oats, old fashioned
  • 1 cup (150g) almond sliced or slivered
  • 1/2 cup (100g) light brown sugar packed
  • 1/4 cup (60ml) honey
  • 2 Tbsp (30ml) water
  • 1 1/4 tsp ground cinnamon
  • 1/4 tsp salt
  • 1 tsp vanilla extract
  • 1/4 tsp baking soda

Instructions

  1. Preheat oven to 300 degrees. In a large mixing bowl, toss together oats and sliced almonds, set aside.
  2. In a medium saucepan, combine brown sugar, honey, water, cinnamon, and salt. Bring mixture to a boil stirring frequently. Once mixture reaches a boil, allow to boil for 1 minute whisking constantly. 
  3. Remove from heat, stir in vanilla and baking soda and whisk until mixture is foamy. Carefully pour hot sugar mixture over oat mixture and toss to evenly coat. 
  4. Spread mixture into an even layer on a silicone baking mat or parchment paper lined 18 by 13-inch rimmed baking sheet. 
  5. Bake in preheated oven, about 36 - 40 minutes until lightly golden brown, removing from oven and tossing twice during baking*. 
  6. Remove from oven allow to cool completely then break into clusters (note that granola wont be crisp until cooled). Store in an airtight container.

Notes

  • When tossing the granola during baking, move oats from edges to the center and spread center to edges to ensure even cooking.
  • Optional: Add 1 cup dried fruits like blueberries, cranberries, or raisins after baking for extra flavor and texture.
