Granola {Without Oil}
Description
The Granola {Without Oil} recipe uses old-fashioned rolled oats and almonds combined with a browned syrup made from light brown sugar, honey, water, cinnamon, salt, vanilla, and baking soda. The syrup is boiled briefly to dissolve and blend flavors, then added hot to the dry ingredients to evenly coat them. Baking at a moderate temperature with occasional tossing encourages even toasting and browning, resulting in a granola that develops clusters as it cools. The absence of oil leads to a lighter but still crunchy end product. This granola can be enjoyed with milk, yogurt, or as a topping for desserts. Adding dried fruit just after baking increases sweetness and chewiness. Storing in an airtight container maintains its texture and freshness.
