Grass Jelly Drink

Grass Jelly Drink combines smooth, mildly herbal grass jelly with honey and soy milk, served chilled over ice. The jelly is made by dissolving grass jelly powder in boiling water, then setting and cutting it into cubes. Layering the mellow jelly with sweet honey and creamy soy milk creates a refreshing beverage with a soft, slightly firm texture. This drink offers a cooling effect and a balance of subtle herbal flavor with rich milkiness, ideal for warm days or as a light treat.

Ingredients

  • 5 cups water 46.8 fl oz, hot, boiling
  • ¾ cup grass jelly powder (3.7 oz, I use Tea zone brand)
  • 4 tablespoons honey (1 tablespoon each glass)
  • 2 cups soy milk ½ cup each glass, or milk
  • 2 cups ice cubes (½ cup each glass)

Instructions

  1. Pour 5 cups of water (46.8 fl oz) into a pot. Then, turn on medium high fire.
  2. Put ¾ cup of grass jelly powder (3.7 oz, I use Tea zone brand) into a glass container. Then, use a whisk to break down the clumps. (You can add more grass jelly powder if you want a firmer texture.)
  3. When the water is boiling, turn off the fire. 
  4. Pour the hot boiling water into the grass jelly powder. (Be careful pouring the hot boiling water.)
  5. Use a whisk to stir and mix the mixture well. 
  6. Let it completely cool off (1-2 hours). Then, cover it with plastic wrap and refrigerate for 6-8 hours or overnight. 
  7. When the grass jelly is done, remove the plastic wrap.
  8. Cut the grass jelly into cubes or strips. 
  9. After that, scoop the grass jelly out. 
  10.  Put ½ cup of grass jelly (5.3 oz) into the cup.
  11. Next, pour 1 tablespoon of honey into the cup. (You can adjust the amount less or more according to your taste.)
  12. After, pour ½ cup of soy milk (4.6 fl oz) into the cup. (You can use other milk.
  13. Lastly, put ½ cup of ice cubes (2.8 fl oz) into the cup. 

Notes

  • Use good quality grass jelly powder for a smooth texture and mild herbal flavor; Tea zone brand is recommended.
  • Honey is preferred as a sweetener but you can substitute with syrup, sweetened condensed milk, or sugar.
  • Soy milk adds creaminess, but other liquids like tea, juice, or coconut milk are suitable alternatives.
  • Follow powder package instructions carefully as different brands may vary in mixing ratios and setting times.
  • Allow the jelly mixture to cool completely before refrigerating to set properly, typically 6-8 hours or overnight.
