Grass Jelly Drink
Description
Grass Jelly Drink is prepared by dissolving grass jelly powder in boiling water and allowing the mixture to set fully in the refrigerator until firm. The jelly is then cut into cubes or strips and combined with honey for sweetness and soy milk for creaminess. The drink is served with ice cubes to chill and dilute slightly, making the texture pleasantly soft and the flavor mellow. The grass jelly powder brand and quantity influence the firmness and herbal intensity of the jelly. Honey provides a natural sweetener that complements the jelly's subtle herbal notes, while soy milk adds a smooth, plant-based creaminess.
The method involves careful mixing of powder with boiling water to avoid lumps and allow full setting time in cool conditions. Once chilled and cubed, the jelly is portioned with measured honey and soy milk into serving glasses with ice. This layered assembly ensures balanced taste and texture in each glass. The drink can be adapted by substituting the soy milk with other liquids like tea or coconut milk and varying sweeteners according to preference.
Use good quality grass jelly powder for consistent setting and delicate flavor. This drink can be served as a refreshing afternoon cool-down or light dessert. The process requires planning ahead due to the setting and chilling time necessary for the jelly to firm up properly. Mixing the jelly thoroughly and whisking to break clumps ensures a smooth consistency. The final drink showcases a contrast of soft jelly cubes against smooth milk and crisp ice.

- When the grass jelly is done, remove the plastic wrap.
- Cut the grass jelly into cubes or strips.
- After that, scoop the grass jelly out.
- Put ½ cup of grass jelly (5.3 oz) into the cup.

Notes
- Use good quality grass jelly powder for a smooth texture and mild herbal flavor; Tea zone brand is recommended.
- Honey is preferred as a sweetener but you can substitute with syrup, sweetened condensed milk, or sugar.
- Soy milk adds creaminess, but other liquids like tea, juice, or coconut milk are suitable alternatives.
- Follow powder package instructions carefully as different brands may vary in mixing ratios and setting times.
- Allow the jelly mixture to cool completely before refrigerating to set properly, typically 6-8 hours or overnight.
