Grasshopper Pie

With just 5 ingredients, our grasshopper pie is a minty dream come true! It's the perfect chilled treat for any occasion.

  • 1 chocolate cookie crust
  • quarts mint ice cream, (about 6 cups)
  • 2 cups whipped cream, store-bought or homemade
  • 6 mint Oreo cookies, crushed
  • Chocolate shavings, or crushed Andes mints

Instructions

  1. Let 1½ quarts of mint ice cream soften for at least 10 minutes.
  2. While ice cream softens, crush mint Oreo cookies in a Ziploc bag. Set aside.
  3. Fill the chocolate Oreo cookie crust with the softened ice cream. Top ice cream with 2 cups whipped cream or Cool Whip.
  4. Sprinkle on crushed mint Oreos and chocolate shavings on top.
  5. Freeze for at least 2 hours. Remove from freezer 15 minutes before serving.
  6. For easy slices, use a knife dipped in hot water, wiping the blade clean between each slice.

  • If you can't find mint ice cream: mix softened vanilla ice cream with creme de menthe and green food coloring.
  • Sub for Mint Oreo cookies: Use 6 regular Oreo cookies and add ¼ cup chopped Andes mints.
