Greek Cabbage Salad
This Greek cabbage salad is the perfect recipe for a BBQ, or any time. It is healthy, flavorful, and a great spin on traditional coleslaw.

Ingredients
- 1 small-medium green cabbage, shredded (about 6-8 cups shredded)
- 1 tsp salt
- 1/2 tsp pepper
- 1/4 cup finely chopped black olives
- 1/4 cup finely chopped green olives
- 6 green onions, chopped thin
- 1/2 cup crumbled Feta cheese
- 1/3 cup chopped fresh dill
- 1/3 cup olive oil
- 3 tbsp red wine vinegar
- 1 tsp dried oregano
Instructions
- To a large bowl add the shredded cabbage and sprinkle over the salt. Use your hands to massage the cabbage with the salt for a few minutes - this helps to just slightly soften the cabbage.
- To the cabbage add all of the remaining ingredients (pepper, olives, feta, dill, olive oil, red wine vinegar and dried oregano) and toss well. Serve and enjoy!
