Greek Cabbage Salad

This Greek cabbage salad is the perfect recipe for a BBQ, or any time. It is healthy, flavorful, and a great spin on traditional coleslaw.

Ingredients

  • 1 small-medium green cabbage, shredded (about 6-8 cups shredded)
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/4 cup finely chopped black olives
  • 1/4 cup finely chopped green olives
  • 6 green onions, chopped thin
  • 1/2 cup crumbled Feta cheese
  • 1/3 cup chopped fresh dill
  • 1/3 cup olive oil
  • 3 tbsp red wine vinegar
  • 1 tsp dried oregano

Instructions

  1. To a large bowl add the shredded cabbage and sprinkle over the salt. Use your hands to massage the cabbage with the salt for a few minutes - this helps to just slightly soften the cabbage.
  2. To the cabbage add all of the remaining ingredients (pepper, olives, feta, dill, olive oil, red wine vinegar and dried oregano) and toss well. Serve and enjoy!

Notes
