Ingredients

  • 2 portion Air fryer Greek chicken
  • 2 head Little gem lettuce chopped
  • 2 portion tzatziki
  • 0.25 cucumber diced
  • 10 cherry tomatoes halved
  • 14 olives halved
  • 2 portion cooked rice
  • 2 portion pickled red onions
  • 40 g feta crumbled

Instructions

  1. Prepare the ingredients. Cook the chicken and rice if not using leftovers.
  2. Assemble the bowls as you wish.

Notes

  • Why not finish off the Greek Chicken Bowls with lots of fresh dill sprinkled on top.
  • If you are making these for meal prep, then I would recommend not adding the tzatziki until just before serving, as it can make everything else a bit soggy.
  • Not an olive fan? You can swap them for capers, and you will still get that salty flavour.
  • If you want to make this much simpler, then why not just use leftovers from a roast chicken?
