Greek Chicken Bowls with Tzatziki

Meal prep made easy with Greek Chicken Bowls. Packed with protein, veggies, and homemade tzatziki for a flavourful and filling meal.

Ingredients
- 2 portion Air fryer Greek chicken
- 2 head Little gem lettuce chopped
- 2 portion tzatziki
- 0.25 cucumber diced
- 10 cherry tomatoes halved
- 14 olives halved
- 2 portion cooked rice
- 2 portion pickled red onions
- 40 g feta crumbled
Instructions
- Prepare the ingredients. Cook the chicken and rice if not using leftovers.
- Assemble the bowls as you wish.
Notes
- Why not finish off the Greek Chicken Bowls with lots of fresh dill sprinkled on top.
- If you are making these for meal prep, then I would recommend not adding the tzatziki until just before serving, as it can make everything else a bit soggy.
- Not an olive fan? You can swap them for capers, and you will still get that salty flavour.
- If you want to make this much simpler, then why not just use leftovers from a roast chicken?
