Greek Chicken Marinade Recipe

Ingredients

  • 1/2 cup plain greek yogurt 127 grams
  • 1/3 cup olive oil 2.5 ounces
  • Juice of 2 lemons 2.5 ounces
  • 2 teaspoons minced garlic 
  • 3 tablespoons fresh oregano
  • 3 tablespoons fresh basil
  • 1 tablespoon fresh dill
  • dash salt & pepper
  • 1.3 pounds boneless skinless chicken breasts two fileted breasts (or thin sliced)

Instructions

  1. In a medium bowl, whisk together the yogurt, olive oil, lemon juice, garlic, oregano, basil, dill, salt and pepper. Mix well.
  2. Add the filleted chicken breasts and turn them so that the marinade coats them.
  3. Cover and refrigerate, allowing the chicken breasts to marinate for at least 2 hours, but up to 8 hours.
  4. Preheat the grill to 400ºF.
  5. Once the grill is heated, place the chicken on the hot grill grates. Allow the chicken to cook for about 5 minutes, then turn to cook for an additional 5 minutes or until the chicken is cooked through (165ºF). The exact timing will depend on how thick the chicken breasts are, so be sure to check the internal temperature.
  6. Allow the chicken to rest for 5 minutes, then serve.
  7. Store any leftovers in the fridge in an airtight container for up to 3 days.
