Ingredients

  • 8 oz chicken grilled or baked and diced
  • 1 ½ cup greens mix
  • 1 cup cauliflower rice
  • ½ tbsp capers
  • ¼ cup canned grilled red/piquillo peppers drained and diced
  • ¼ cup feta
  • 2 beets sliced into thin rounds, and then into half-circles
  • lemons to garnish
For the dressing:
  • 2 tbsp lemon juice
  • 2 tbsp olive oil
  • 1 tbsp champagne vinegar
  • 1 tbsp oregano
  • 1 tbsp garlic powder
  • ½ tbsp basil

Instructions

  1. In a jar or blender mix dressing ingredients.
  2. Add all other ingredients to a bowl, top with dressing and enjoy!
