Greek Chicken Sloppy Joes
Greek Chicken Sloppy Joes use ground chicken cooked with olive oil, onion, bell pepper, and garlic, simmered in tomato sauce, chicken broth, and tomato paste with oregano, then topped with feta cheese and kalamata olives. The mixture is served inside toasted brioche buns, combining Greek-inspired flavors with a classic American sandwich style for a hearty, flavorful meal.
Ingredients
- 1 pound ground chicken
- 2 tablespoons olive oil
- 1/2 red onion chopped
- 1/2 cup green bell pepper chopped
- 2 garlic minced, cloves
- 1 cup tomato sauce
- 1 cup chicken broth
- 1/4 cup tomato paste
- 1 teaspoon oregano
- 1/2 cup feta cheese
- 1/2 cup kalamata olives
Instructions
- Add the chicken, olive oil, onions and green bell pepper to a large skillet on medium high heat breaking it apart but leaving some chunks about the size of a raspberry or small grape (don't crush the heck out of it, the larger crumbles will help give the sandwich stability).
- Cook until well browned (5-6 minutes), then add in the garlic, tomato sauce, chicken broth, tomato paste, and oregano and continue cooking until the sauce starts to evaporate and the mixture becomes "sloppy" (about 5-6 minutes).
- When the sauce is reduced top with feta and olives and serve inside a toasted brioche bun.
