Ingredients
- 1 pound ground chicken
- 2 tablespoons olive oil
- 1/2 red onion chopped
- 1/2 cup green bell pepper chopped
- 2 garlic minced, cloves
- 1 cup tomato sauce
- 1 cup chicken broth
- 1/4 cup tomato paste
- 1 teaspoon oregano
- 1/2 cup feta cheese
- 1/2 cup kalamata olives
Instructions
- Add the chicken, olive oil, onions and green bell pepper to a large skillet on medium high heat breaking it apart but leaving some chunks about the size of a raspberry or small grape (don't crush the heck out of it, the larger crumbles will help give the sandwich stability).
- Cook until well browned (5-6 minutes), then add in the garlic, tomato sauce, chicken broth, tomato paste, and oregano and continue cooking until the sauce starts to evaporate and the mixture becomes "sloppy" (about 5-6 minutes).
- When the sauce is reduced top with feta and olives and serve inside a toasted brioche bun.
