Ingredients

  • 1 cup yellow split peas rinsed
  • 1 large onion chopped
  • 2 cloves garlic minced
  • 4 cups water
  • 1/4 cup olive oil
  • Juice of 1 lemon
  • salt to taste
  • black pepper to taste
  • Chopped onions, capers, olive oil drizzle optional, as garnish

Instructions

  1. Combine split peas, onion, garlic, and water in a large pot. Bring to a boil, then reduce heat to simmer.
  2. Simmer for about 45 minutes, or until the split peas are very soft and the mixture has thickened.
  3. Remove from heat. Blend the mixture with an immersion blender until smooth. Stir in olive oil and lemon juice. Season with salt and pepper to taste.
  4. Serve warm or at room temperature, garnished with chopped fresh onions, capers and a drizzle of olive oil, if desired.
