Greek Orzo Salad

Ingredients

  • 1 cup dry orzo pasta
  • 1 large english cucumber diced
  • 1 cup cherry tomatoes halved
  • 1/2 cup kalamata olives sliced
  • 1/3 cup red onion finely chopped
  • 1/2 cup feta cheese crumbled
  • 1/4 cup olive oil
  • 3 tablespoons lemon juice
  • 1 clove garlic minced
  • 1 teaspoon dried oregano
  • salt and pepper to taste

Instructions

  1. Cook orzo in a pot of boiling salted water until al dente, about 8-10 minutes. Drain and rinse under cold water to cool.
  2. In a large bowl, combine the cooled orzo, cucumber, tomatoes, olives, red onion, and feta cheese.
  3. Whisk together olive oil, lemon juice, minced garlic, oregano, salt, and pepper. Pour over the salad and toss to combine.
