Ingredients

  • gluten-free penne pasta 12oz, boxed
  • 2 zucchini sliced thin, small
  • 1- pint grape tomatoes cut in half
  • ½ cup kalamata olive cut in half, black
  • 1 feta cheese crumbled, with tomato and basil, packaged
  • ½ cup parsley chopped, or
  • ½ cup basil chopped, or
  • For dressing:
  • ⅓ cup red wine vinegar
  • ½ cup grapeseed oil or olive
  • lemon juice of half
  • 1 ½ teaspoon herbes de provence or oregano
  • salt to taste
  • black pepper to taste

Instructions

    Cup of Yum
  1. Cook pasta according to package directions and let cool
  2. Put pasta in a large bowl and add all other ingredients.
  3. For dressing:
  4. Place all dressing ingredients in a jar and shake.
  5. Pour over pasta salad and toss gently. Adjust to taste with salt and pepper.
