Ingredients
- gluten-free penne pasta 12oz, boxed
- 2 zucchini sliced thin, small
- 1- pint grape tomatoes cut in half
- ½ cup kalamata olive cut in half, black
- 1 feta cheese crumbled, with tomato and basil, packaged
- ½ cup parsley chopped, or
- ½ cup basil chopped, or
- For dressing:
- ⅓ cup red wine vinegar
- ½ cup grapeseed oil or olive
- lemon juice of half
- 1 ½ teaspoon herbes de provence or oregano
- salt to taste
- black pepper to taste
Instructions
- Cook pasta according to package directions and let cool
- Put pasta in a large bowl and add all other ingredients.
- For dressing:
- Place all dressing ingredients in a jar and shake.
- Pour over pasta salad and toss gently. Adjust to taste with salt and pepper.
