Ingredients

  • 12 potato or other Little Potato Company creamer variety, Blushing Belle variety, halved
  • 2 cups cherry tomato halved
  • 1 cup red onion minced
  • 8 ounces feta cheese crumbled
  • 15 kalamata olives pitted
  • ¼ cup lemon juice
  • 2 tablespoons extra virgin olive oil
  • ¼ cup dill minced fresh
  • ¼ cup parsley minced
  • salt to taste
  • black pepper to taste
  • 2 tablespoons pine nuts optional garnish, toasted

Instructions

  1. Place halved potatoes in a large pot and cover with cold water. Bring to a boil and cook until fork tender; strain and let cool slightly.
  2. While potatoes are cooking, combine the tomatoes, red onion, feta and olives in a large bowl. Add in the cooked potatoes and all remaining ingredients.
  3. Toss well and season with salt and pepper to taste before serving.
