Ingredients
- 1/4 cup olive oil
- 1/4 cup red wine vinegar
- 1 1/2 teaspoons fresh lemon juice
- 1 teaspoon white sugar
- 2 teaspoons Greek seasoning or make your own, divided
- 1/2 teaspoon coarse salt or to taste, divided
- 1/2 teaspoon ground black pepper or to taste, divided
- 12 red potatoes
- 1/2 cup black olives
- 1/2 cherry tomatoes sliced in half
- 1/2 cup crumbled Feta cheese
Instructions
- Make the Greek Vinaigrette by combining oil, vinegar, lemon juice, sugar, half of Greek seasoning, and half of salt and pepper. The vinaigrette can be done a day ahead.
- Drizzle potatoes with oil and sprinkle with salt and pepper, and Greek seasoning; toss to coat. Grill potatoes, covered, over medium heat or broil 4 in. from the heat for 20-25 minutes or until tender.
- Place in a large bowl. Add the black olives and tomatoes. Pour the vinaigrette over the tomatoes. Toss to coat. Sprinkle with feta cheese. Serve salad warm or cold.
