Greek Quinoa Salad
This Greek Quinoa Salad features fluffy cooked quinoa combined with diced cherry tomatoes, bell peppers, cucumber, and black olives for a medley of fresh flavors and textures. Crumbled feta cheese adds creaminess and saltiness, while a Greek-style dressing with olive oil, lemon, red wine vinegar, and herbs ties the salad together. Fresh parsley on top adds brightness and a hint of herbal flavor.
Ingredients
- 1 cup quinoa uncooked
- 2 cups water or broth
- 1 pint cherry tomato diced
- ½ cup red bell pepper diced
- ½ cup green bell pepper diced
- ½ English cucumber diced
- ½ cup black olive sliced
- ¼ cup red onion diced
- 3 ounces feta cheese crumbled
- ⅓ cup Greek salad dressing or homemade below
- 1 tablespoon parsley chopped, fresh
Instructions
- Prepare quinoa according to package directions. Cool.
- In a large bowl, combine tomatoes, red and green peppers, cucumber, olives, red onion and feta cheese and dressing. Toss to coat evenly.
- Add cooled quinoa and combine.
- Garnish with fresh parsley on top.
Notes
- A simple homemade dressing can be made by whisking olive oil, lemon juice, red wine vinegar, sugar, oregano, and basil.
