  • 1 cup quinoa uncooked
  • 2 cups water or broth
  • 1 pint cherry tomato diced
  • ½ cup red bell pepper diced
  • ½ cup green bell pepper diced
  • ½ English cucumber diced
  • ½ cup black olive sliced
  • ¼ cup red onion diced
  • 3 ounces feta cheese crumbled
  • cup Greek salad dressing or homemade below
  • 1 tablespoon parsley chopped, fresh

Instructions

  1. Prepare quinoa according to package directions. Cool.
  2. In a large bowl, combine tomatoes, red and green peppers, cucumber, olives, red onion and feta cheese and dressing. Toss to coat evenly.
  3. Add cooled quinoa and combine.
  4. Garnish with fresh parsley on top.

Notes

  • A simple homemade dressing can be made by whisking olive oil, lemon juice, red wine vinegar, sugar, oregano, and basil.
