Greek Salad

Greek Salad is a great light salad full of crisp veggies and a wildly flavorful dressing! Serve it as a side or add chicken to make a meal!

Ingredients

Dressing
  • ½ cup olive oil
  • ⅓ cup red wine vinegar
  • 2 tablespoons lemon juice
  • 1 clove garlic minced
  • 1 teaspoon Dijon mustard
  • 1 teaspoon oregano dried
  • ½ teaspoon salt
  • ½ teaspoon black pepper
Salad
  • 1 pint grape tomatoes cut in half
  • 1 English cucumber quartered and sliced
  • 1 green bell pepper cored and diced
  • ½ red onion peeled and thinly sliced
  • 1 cup feta cheese or crumbled feta, marinated, cubes
  • ½ cup black olives drained, canned sliced
  • ¼ cup parsley finely chopped, fresh

Instructions

  1. In a medium mixing bowl, whisk together the olive oil, vinegar, lemon juice, garlic, mustard, oregano, salt, and pepper until well combined. Set aside.
  2. In a large mixing bowl, gently toss the tomatoes, cucumber, bell pepper, onion, feta, olives, and parsley together.
  3. Pour the dressing over the salad and gently toss to coat. Serve immediately.
