Greek Salad
Greek Salad is a great light salad full of crisp veggies and a wildly flavorful dressing! Serve it as a side or add chicken to make a meal!
Ingredients
Dressing
- ½ cup olive oil
- ⅓ cup red wine vinegar
- 2 tablespoons lemon juice
- 1 clove garlic minced
- 1 teaspoon Dijon mustard
- 1 teaspoon oregano dried
- ½ teaspoon salt
- ½ teaspoon black pepper
Salad
- 1 pint grape tomatoes cut in half
- 1 English cucumber quartered and sliced
- 1 green bell pepper cored and diced
- ½ red onion peeled and thinly sliced
- 1 cup feta cheese or crumbled feta, marinated, cubes
- ½ cup black olives drained, canned sliced
- ¼ cup parsley finely chopped, fresh
Instructions
- In a medium mixing bowl, whisk together the olive oil, vinegar, lemon juice, garlic, mustard, oregano, salt, and pepper until well combined. Set aside.
- In a large mixing bowl, gently toss the tomatoes, cucumber, bell pepper, onion, feta, olives, and parsley together.
- Pour the dressing over the salad and gently toss to coat. Serve immediately.
