Greek Spinach Salad

This super fresh Greek spinach salad is dressed in a light homemade vinaigrette and topped with feta, tomatoes, bell pepper, onion, and cucumber. A fun and healthy twist on a classic!

Ingredients

Salad:
  • 1 package 5 ounces baby spinach
  • ½ small red onion thinly sliced
  • 1.5 cups sweet cherry tomatoes halved
  • 1 medium English cucumber sliced into quarter-moons
  • 1 yellow or orange bell pepper seeded and chopped
  • ½ cup kalamata olives sliced
  • 4 ounces feta cheese cut into ½ inch cubes or crumbled
Vinaigrette:
  • 3 tablespoon extra-virgin olive oil
  • 1 large lemon juiced
  • 2 tablespoon red wine vinegar
  • 1 teaspoon Dijon mustard
  • 2 garlic cloves minced
  • 1 teaspoon dried oregano
  • ½ teaspoon salt
  • ½ teaspoon black pepper

Instructions

  1. Make the dressing by whisking together ingredients in a small bowl or mason jar. Taste and adjust seasoning to your liking by adding more lemon juice, salt, pepper, and/or olive oil, if desired. Place in the refrigerator until ready to use.
  2. Add spinach to a large salad bowl and layer on the sliced red onion, tomatoes, cucumber, bell pepper, olives, and feta cheese.
  3. When ready to serve, drizzle dressing on the salad and gently toss to combine.
  4. This salad is best enjoyed within 10 minutes of dressing.
