Greek Style Cauliflower Rice Salad

Fresh vegetable salad with cauliflower rice and Brussels sprouts topped with an herb Greek vinaigrette dressing.

Ingredients

  • Salad
  • 2 cups cauliflower riced
  • 2 cups sliced mini cucumbers about 5
  • 20 cherry tomatoes cut in half
  • 1/2 cup yellow bell peppers sliced
  • 1/2 cup Orange Bell Peppers sliced
  • 2 Tablespoons fresh parsley chopped
  • 1/4 cup red onion sliced
  • 1 cup pickled Brussels sprouts sliced in half
  • feta cheese crumbled
  • GREEK VINAIGRETTE
  • 1/3 cup fresh squeezed lemon juice
  • 1/4 cup olive oil
  • 2 Tablespoon red wine vinegar
  • 1/2 Tablespoon fresh oregano chopped
  • 1/2 Tablespoon fresh thyme chopped
  • 1/2 teaspoon fresh dill chopped
  • 1 teaspoon garlic minced
  • salt and pepper to taste

Instructions

SALAD
    Cup of Yum
  1. Prepare cauliflower rice by placing florets in food processor. Pulse.
  2. Slice cucumbers, tomatoes, peppers, red onion, and parsley. Place in a large salad bowl.
GREEK VINAIGRETTE
  1. Chop oregano, thyme, dill, and garlic.
  2. Place lemon juice, olive oil, and red wine vinegar in a salad dressing bottle.
  3. Add herbs and season with salt and pepper.
  4. Shake to mix ingredients.
  5. Chill until ready to serve salad
ASSEMBLE SALAD
  1. Toss all vegetables together and pour dressing over ingredients. Top with feta cheese.
