Greek Tortellini Salad is one of our all time favorites! Tender cheese filled tortellini, crunchy peppers, crisp cucumbers and juicy tomatoes, topped with loads of cheese and tossed in a greek flavored dressing!

Ingredients

  • 18 ounces refrigerated cheese tortellini 1 package
  • 1 ½ cups grape tomatoes halved
  • 1 ½ cups sliced cucumber
  • 1 green bell pepper diced
  • 1 red bell pepper diced
  • 4 ounces crumbled Feta cheese
  • ⅓ cup diced red onion
  • ⅓ cup pitted kalamata olives or black olives
  • 1 cup Greek Salad Dressing more to taste

Instructions

    Cup of Yum
  1. Cook pasta according to package directions and run under cold water.
  2. Combine all remaining ingredients in a large bowl.
  3. Refrigerate at least 2 hours before serving.
