Ingredients

  • 1 (16-ounce) package penne pasta
  • 1 cup sliced kalamata olives, pitted
  • 2 small diced cucumbers,
  • 1 cup sliced cherry tomatoes
  • 1 ½ cups crumbled Feta cheese
  • 1 cup low-fat plain Greek yogurt
  • ¼ cup olive oil
  • 1 tablespoon chopped fresh dill
  • 1 tablespoon lemon juice
  • 1 teaspoon salt
  • ½ teaspoon freshly ground pepper
  • 1 teaspoon minced garlic, 1 clove

Instructions

  1. Prepare 1 (16-ounce) package penne pasta according to package directions. Drain and rinse in cold water.
  2. Place the cooked and drained pasta into a large bowl. Add 1 cup sliced kalamata olives, 2 small diced cucumbers,, 1 cup sliced cherry tomatoes, and 1 ½ cups crumbled feta cheese.
  3. In a small bowl whisk 1 cup low-fat plain Greek yogurt, ¼ cup olive oil, 1 tablespoon chopped fresh dill, 1 tablespoon lemon juice, 1 teaspoon salt, ½ teaspoon freshly ground pepper and 1 teaspoon minced garlic,
  4. Pour the dressing over the pasta ingredients and gently toss to combine. Chill for 1 hour before serving.
