Green Apple Cucumber Slaw

This Green Apple Cucumber Slaw would be the perfect addition to your summer barbecue. My kids were all over it, so it will definitely be a crowd pleaser. The combination of green apples and cucumbers in a creamy sauce works well as a side dish at your cookouts.

Ingredients

  • 1 cucumber halved and cut into thin slices
  • 2 Granny Smith apples cut into thin slices
  • 2 green onions white and green parts
  • 1/4 cup sour cream
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey
  • salt to taste
  • pepper to taste

Instructions

  1. Add the cucumber, apple, and green onion to a large bowl. (For the apple I used an apple corer/slicer and then sliced each piece two more times.)
  2. In a small bowl, whisk together the sour cream, vinegar, honey, salt, and pepper. Pour over top of the apple mixture and toss together until well combined. 
  3. Serve or store in the refrigerator for up to two days.
