Ingredients
Garlic Scapes Aioli
- ½ cup mayonnaise see notes
- ¼ cup finely minced garlic scapes
- 1 small garlic clove finely minced
- 1 pinch sea salt to taste
Green Beans
- 1 tablespoon olive oil
- 1 lb green beans trimmed
Instructions
- Mix the mayonnaise, garlic scapes, garlic, and salt in a small bowl. Put the bowl into your fridge until you're ready to serve it. Note: the mayonnaise will taste best if the flavors have at least half an hour to meld.
- Heat the olive oil in a large frying pan over medium-high heat. Add the green beans and cook them for 5 minutes, tossing them in the pan a few times. You want them to be slightly softened (with a bit of crunch left) and several nice, dark blistered spots.
- Serve the beans with the garlic scapes aioli on the side or drizzled over the top.

Notes
- This recipe is great with homemade mayonnaise!
- Make sure that the green beans are dry before you add them to the pan. Any water left on them from washing can make the oil in the pan spit dangerously.
