Green Goddess Dressing Recipe

This Green Goddess Dressing blends fresh spinach, parsley, dill, and pistachios with yogurt and olive oil to create a creamy, herbaceous dressing. Ingredients

  • 1 cup spinach
  • 1/2 cup parsley
  • 1/3 cup dill
  • 1/2 cup pistachio unsalted
  • 1/2 cup yogurt
  • 1/4 cup olive oil
  • 1 tsp Dijon mustard
  • 1 clove garlic
  • 1/2 tsp kosher salt
  • 2 tbsp lemon juice

Instructions

    Cup of Yum
  1. Place the spinach, parsley and dill in the bowl of a food processor.
  2. Add in the pistachios, yogurt, olive oil, mustard, garlic, salt and lemon juice.
  3. Blend until all is combined and the dressing is creamy.
  4. Transfer to a jar and refrigerate for up to 5 days.

Notes

  • The dressing can be refrigerated for up to 5 days in a sealed container.
  • Try substituting different herbs such as basil, chives, or mint for variety.
  • Use walnuts, pecans, or cashews in place of pistachios if preferred.
  • Serve chilled as a dressing for salads or as a sauce for roasted vegetables.
