Green Goddess Dressing Recipe
This Green Goddess Dressing blends fresh spinach, parsley, dill, and pistachios with yogurt and olive oil to create a creamy, herbaceous dressing. The addition of Dijon mustard and lemon juice adds tanginess and depth. It's a versatile, vibrant sauce suitable for salads and roasted vegetables, offering a fresh flavor lift with a nutty undertone from the pistachios.
Ingredients
- 1 cup spinach
- 1/2 cup parsley
- 1/3 cup dill
- 1/2 cup pistachio unsalted
- 1/2 cup yogurt
- 1/4 cup olive oil
- 1 tsp Dijon mustard
- 1 clove garlic
- 1/2 tsp kosher salt
- 2 tbsp lemon juice
Instructions
- Place the spinach, parsley and dill in the bowl of a food processor.
- Add in the pistachios, yogurt, olive oil, mustard, garlic, salt and lemon juice.
- Blend until all is combined and the dressing is creamy.
- Transfer to a jar and refrigerate for up to 5 days.

- The dressing can be refrigerated for up to 5 days in a sealed container.
- Try substituting different herbs such as basil, chives, or mint for variety.
- Use walnuts, pecans, or cashews in place of pistachios if preferred.
