  • 1/3 cup dill
  • 1/2 cup pistachio unsalted
  • 1/2 cup yogurt
  • 1/4 cup olive oil
  • 1 tsp Dijon mustard
  • 1 clove garlic
  • 1/2 tsp kosher salt
  • 2 tbsp lemon juice

Instructions

  1. Place the spinach, parsley and dill in the bowl of a food processor.
  2. Add in the pistachios, yogurt, olive oil, mustard, garlic, salt and lemon juice.
  3. Blend until all is combined and the dressing is creamy.
  4. Transfer to a jar and refrigerate for up to 5 days.
