Green Goddess Salad - avocado, broccoli, cucumber, grapes, cabbage and lemon juice. So light, refreshing and yummy! Very healthy and filling!

Ingredients

  • 1 avocado divided
  • 1 large cucumber sliced
  • ¼ head of broccoli chopped in small florets
  • 1 cup grapes
  • ¼ of cabbage sliced
  • Juice from 1 lemon
  • 1 - 2 Tablespoon extra virgin olive oil
  • salt and pepper to taste

Instructions

    Cup of Yum
  1. Mash half avocado with a fork and add lemon juice and olive oil. Season with salt and freshly ground black pepper.
  2. Toss the first 6 ingredients in a mixing bowl and drizzle with the avocado lemon dressing.
