Ingredients

  • 1 cup plain Greek yogurt*
  • 1 cup fresh parsley
  • 1 cup basil
  • 2 tablespoons chopped chives
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons red wine vinegar
  • 1 tablespoon extra-virgin olive oil
  • 1 clove garlic, minced
  • 1/4 teaspoon kosher salt
  • freshly ground black pepper

Instructions

    Cup of Yum
  1. In a food processor, combine the yogurt, parsley, basil, chives, lemon juice, vinegar, olive oil, garlic, salt, and pepper. Blend until smooth. Season to taste.
  2. Drizzle over salad greens or use as a veggie dip. You can also drizzle over grilled meats or roasted vegetables.
  3. Store in a jar or airtight container in the fridge for up to 5 days. Stir well before using.

Notes

  • I like to use plain Greek yogurt for extra protein, but sour cream or mayo will work too.
  • You can use a mix of whatever herbs you like. Cilantro, dill, tarragon, and mint are all good options.
  • You can add anchovies, anchovy paste, or capers for a umami flavor.
  • I prefer using a food processor for this recipe. You can use a blender, but you might have to stop and scrape down the sides with a spatula a few times to make sure all of the herbs get well blended.
