Green Goddess Salad Recipe

Fresh green goddess salad is a mx of green vegetables blended into a creamy dressing, then lightly tossed with a simple green salad. Enjoy as a main dish or side to any meal.

Ingredients

GREEN GODDESS DRESSING
  • ½ cup PLAIN yogurt
  • ¼ cup olive oil
  • ½ of an avocado
  • 1 tablespoon red wine vinegar
  • 1 tablespoon lime juice
  • 1 cup packed fresh baby spinach
  • ¼ cup fresh chives
  • ¼ cup fresh parsley
  • 3 green onions trimmed (greens and white part)
  • 2 cloves garlic
  • ¼ cup fresh basil leaves
  • 1 teaspoon salt
  • ground black pepper to taste
GREEN GODDESS SALAD
  • Half of head iceberg lettuce chopped
  • 1 cup finely chopped cucumber
  • 1 red bell pepper finely diced
  • Half of avocado diced
  • 2 green onions chopped

Instructions

  1. Prepare the salad dressing by blending all ingredients in a food processor or blender. Set aside.
  2. Chop the lettuce, cucumber, red pepper, avocado and green onion.
  3. Toss the salad ingredients in a large salad bowl.
  4. Pour prepared salad dressing over the salad in 1/4 cup increments. Fold in the salad and toss to coat. Add additional dressing to suit your preference.

Notes

  • Red bell pepper may be replaced with diced tomatoes.
  • Mayonnaise or sour cream can be used in the dressing in place of the yogurt.
