Fresh green goddess salad is a mx of green vegetables blended into a creamy dressing, then lightly tossed with a simple green salad. Enjoy as a main dish or side to any meal.

Ingredients
GREEN GODDESS DRESSING
- ½ cup PLAIN yogurt
- ¼ cup olive oil
- ½ of an avocado
- 1 tablespoon red wine vinegar
- 1 tablespoon lime juice
- 1 cup packed fresh baby spinach
- ¼ cup fresh chives
- ¼ cup fresh parsley
- 3 green onions trimmed (greens and white part)
- 2 cloves garlic
- ¼ cup fresh basil leaves
- 1 teaspoon salt
- ground black pepper to taste
GREEN GODDESS SALAD
- Half of head iceberg lettuce chopped
- 1 cup finely chopped cucumber
- 1 red bell pepper finely diced
- Half of avocado diced
- 2 green onions chopped
Instructions
- Prepare the salad dressing by blending all ingredients in a food processor or blender. Set aside.
- Chop the lettuce, cucumber, red pepper, avocado and green onion.
- Toss the salad ingredients in a large salad bowl.
- Pour prepared salad dressing over the salad in 1/4 cup increments. Fold in the salad and toss to coat. Add additional dressing to suit your preference.
Notes
- Red bell pepper may be replaced with diced tomatoes.
- Mayonnaise or sour cream can be used in the dressing in place of the yogurt.
