Green Onion and Shallot Sourdough Discard Pancakes

Ingredients

  • 1 cup sourdough discard
  • 1 egg
  • 1/4 cup flour
  • 1/2 cup water
  • 1 tbsp garlic powder
  • 1 pinch salt
  • 1/2 cup green onions or more
  • 2 shallots sliced thinly
  • olive oil

Instructions

  1. Stir to combine the sourdough discard, egg, flour and water. Then add in the garlic powder, salt, green onions, and shallots.
  2. On medium heat, coat a pan with olive oil and pour 1/3 of the mixture into the pan, let the pancake cook for around 3-4 minutes. The top of the pancake should go from liquidy to looking taut and slightly solid.
  3. Brush the top or drizzle the top of the pancake with more olive oil before flipping the pancake over with a large spatula. Repeat the process twice with 2-3 minutes on each side or until the pancakes are golden to your liking.
  4. Repeat with the rest of the mixture.
  5. Cut into 6 or 8 slices with a knife and serve with soy sauce or sauce of your choice.
