Grilled Avocadoes Stuffed With Veggie Quinoa

Ingredients

For the vegetable quinoa:
  • 1 cup (150g) quinoa washed and drained
  • 4 green onions sliced
  • ½ small cucumber deseeded and chopped
  • 4 tomatoes finely chopped
  • ¼ cup (50g) cooked sweetcorn kernels
  • 1 handful chopped parsley
  • 1 handful chopped coriander
  • Juice of 1 lemon
  • 1-2 tablespoons olive oil
For the grilled avocadoes:
  • 12 large avocados
  • 1 lime juiced
  • 1 tablespoon olive oil
To serve:
  • Lime wedges fo garnish

Instructions

Make the vegetable quinoa:

  1. Cook quinoa according to packet instructions, let cool and transfer to the salad bowl.
  2. Add all the other ingredients, including lemon juice and olive oil to your taste to the quinoa, mix and set aside.
Grilled the avocados:
  1. Fire up the barbeque and wait till the coals are medium hot.
  2. Halve the avocados and remove the seed but leave the skin on.
  3. Brush the avocado halves with lime juice, followed by some olive oil.
  4. Brush the grill with some oil and grill the avocados flesh side down for about 3 minutes, then remove from the heat.
Stuff the avocados:
  1. Stuff the avocados with as much vegetable quinoa as they can hold and serve with extra lime slices.

  • Brushing the avocado halves with lime juice helps prevent discoloration of the fruit.
  • Feel free to throw in other veggies you have in your refrigerator and garden too.
  • This is great for using up leftover quinoa.
