Ingredients

  • 4 lb beef short ribs about 1/4 inch thickness
  • 3/4 cup low-sodium soy sauce
  • 1/4 cup mirin rice vinegar
  • 1/2 cup brown sugar
  • 1/3 cup apple juice
  • 2 garlic cloves minced
  • 2 tbsp fresh ginger minced
  • 1/3 cup green onions garnish

Instructions

    Cup of Yum
  1. In a food safe bag, combine the soy sauce, rice vinegar, brown sugar, apple juice, garlic cloves, and ginger together.
  2. Add the ribs, seal the bag, and massage the marinade in through the outside of the bag. Allow the ribs to marinate for at least 4 hours.
  3. Remove the Beef Short Ribs from the marinade and set the bag of marinade aside. Grill the ribs on each side for about 4 minutes or until each side is golden and the internal temperature is at 145°F.
  4. In a small saucepan, boil the marinade until it reduces by half (this should take about 7 minutes). Garnish the Beef Short Ribs with green onions and serve them with the marinade on the side for dipping.
