Grilled Chicken and Avocado Salsa
This recipe features skinless, boneless chicken breasts marinated briefly in lime juice, cilantro, and olive oil, then grilled and topped with a fresh avocado salsa. The salsa combines cherry tomatoes, diced avocado, jalapeño, salt, and pepper for a bright, creamy complement. Ingredients
- 4 chicken breast skinless, boneless
- 2 lime 1 1/2 for chicken and 1/2 for salsa, juiced
- 2 tablespoons cilantro chopped
- 1 1/2 tablespoons olive oil
- 1/4 teaspoon salt
Avocado Salsa
- 1 cup cherry tomato I used a variety, sliced
- 1 avocado peeled, pitted, and diced
- 1 jalapeño diced
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
Instructions
- In a large bowl mix the juice from 1 1/2 limes together with cilantro and olive oil. Marinade chicken while preparing salsa.
- For salsa in a medium bowl combine tomatoes, avocado, jalapeno, salt and pepper together.
- Remove chicken from marinade and sprinkle 1/4 teaspoon of salt; discard marinade.
- Heat greased barbecue to medium heat. Grill chicken 6 to 8 minutes on each side or until done (170ºF)
- Top cooked chicken with avocado salsa.
Notes
- Marinate the chicken for about 30 minutes; longer marinating is unnecessary due to lime's quick protein breakdown.
