Grilled Chicken and Avocado Salsa
Description
Grilled Chicken and Avocado Salsa is prepared by marinating chicken breasts in a mixture of lime juice, olive oil, and chopped cilantro. The acidity in the lime juice helps break down proteins quickly, so only a short marinating time of around 30 minutes is needed before grilling. After grilling the chicken to an internal temperature of 170ºF for doneness, it's served topped with a chunky avocado salsa made from cherry tomatoes, diced avocado, jalapeño, and seasoning.
The chicken benefits from the lime and cilantro marinade, adding bright citrus and herbal notes, while grilling imparts a subtle smoky flavor and char. The avocado salsa adds creamy texture with fresh, mild heat from the jalapeño, and juicy bursts from the tomatoes. Together, they balance flavor and texture, making the dish refreshing and satisfying.
This grilled chicken pairs well with rice, tortillas, or a simple green salad for an easy meal. It's suitable for outdoor barbecues or quick indoor preparations, showcasing fresh, simple ingredients. The short marinating time makes it convenient for spontaneous cooking, while the avocado salsa adds a flavorful topping that doesn’t require cooking.
Ingredients
- 4 chicken breast skinless, boneless
- 2 lime 1 1/2 for chicken and 1/2 for salsa, juiced
- 2 tablespoons cilantro chopped
- 1 1/2 tablespoons olive oil
- 1/4 teaspoon salt
Avocado Salsa
- 1 cup cherry tomato I used a variety, sliced
- 1 avocado peeled, pitted, and diced
- 1 jalapeño diced
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
Instructions
- In a large bowl mix the juice from 1 1/2 limes together with cilantro and olive oil. Marinade chicken while preparing salsa.
- For salsa in a medium bowl combine tomatoes, avocado, jalapeno, salt and pepper together.
- Remove chicken from marinade and sprinkle 1/4 teaspoon of salt; discard marinade.
- Heat greased barbecue to medium heat. Grill chicken 6 to 8 minutes on each side or until done (170ºF)
- Top cooked chicken with avocado salsa.
Notes
- Marinate the chicken for about 30 minutes; longer marinating is unnecessary due to lime's quick protein breakdown.
