Grilled Chicken Fajita Skewers

Scrumptious Grilled Chicken Fajita Skewers are a fast fun dinner!  Flavorful and juicy, these skewers are ready to grill in just minutes!

Ingredients

  • 1 pound boneless skinless chicken breast cut into 1-inch cubes
  • 3 tablespoons chili powder
  • 2 tablespoons ground cumin
  • ½ tablespoon garlic powder
  • ½ teaspoon salt plus more to taste
  • 1 green bell pepper cored and cut into 1-inch pieces
  • 1 red bell pepper cored and cut into 1-inch pieces
  • 1 yellow bell pepper cored and cut into 1-inch pieces
  • 1 red onion peeled and cut into 1-inch pieces

Instructions

  1. In a large mixing bowl, mix together the chili powder, garlic powder, cumin, and salt.
  2. Add the cubed chicken to the spice mix and toss until well-coated.
  3. Assemble the skewers by alternating between chicken, peppers, and onions until each skewer is filled. Sprinkle a little more salt over skewers.
  4. Grill the skewers over medium-high heat for 4-5 minutes per side or until the chicken is cooked through (165 degrees F internal temperature).
  5. Remove from the grill and serve with Mexican rice, tortillas, sour cream, salsa, guacamole, and anything else you like on your fajitas!

Notes

  • You can also use a grill pan instead if the weather isn't great for grilling.
