Ingredients

  • 2 medium eggplants sliced into 1/2-inch rounds
  • 3 tablespoons olive oil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano

Instructions

  1. Preheat the grill to medium-high heat.
  2. Brush both sides of the eggplant slices with olive oil and season with salt, pepper, thyme, and oregano.
  3. Place the eggplant slices on the grill. Grill each side for about 5 minutes or until the eggplant is tender and has grill marks.
