Ingredients

Lamb Kabobs Ingredients:
  • 450 g Lamb leg steak cut into 2.5cm (1 inch) cubes, or lamb shoulder, 1 lb
  • 2 tablespoons vegetable oil
  • 1 teaspoon Garlic puree
  • 1 tablespoon lemon juice
  • 2 teaspoons oregano
  • 1 teaspoon cinnamon
  • 1 teaspoon cumin
  • 1 teaspoon Coriander
  • 1 teaspoon kosher salt
  • ½ teaspoon allspice
  • 3/4 teaspoon smoked paprika

  1. Place all the marinade ingredients in a large, shallow bowl. Add the lamb, toss to coat, cover and marinate in the fridge for up to two hours, or overnight if time allows.
  2. Soak 6 wooden skewers in cold water for 30 minutes.
  3. Thread pieces of lamb onto the skewers.
  4. Cook under a preheated grill or on a prepared barbecue for 12-16 minutes, turning occasionally or until any meat juices run clear. Try (7-9 minutes cook time for medium rare meat)

Notes

  • Wrap wooden skewer ends with foil to prevent burning during grilling.
  • Cut lamb into equal-sized chunks for even cooking.
  • Trim lamb for a leaner, lower calorie option.
  • Double the marinade recipe to save unused marinade for later meals.
