Grilled Lamb Kabobs
Description
Grilled Lamb Kabobs feature lamb leg or shoulder cut into uniform cubes and marinated in a combination of garlic puree, lemon juice, and herbs like oregano combined with fragrant spices such as cinnamon, cumin, coriander, allspice, and smoked paprika. The marinade tenderizes and seasons the meat before threading onto soaked wooden skewers.
Cooking under a grill or on a barbecue for 12-16 minutes ensures the lamb is cooked through, with a recommendation to shorten the time for medium rare. Turning the skewers during cooking promotes even browning and juiciness. The spice mix adds depth without overwhelming, complementing the natural lamb flavor.
These kabobs can be served alongside grilled vegetables or a salad for a balanced meal. The recipe suggests ways to prevent skewers from burning and tips for preparing the grill to avoid sticking. Marinating longer enhances the taste, and you can customize the skewers by including quick-cooking vegetables between the lamb pieces.
Using trimmed lamb reduces calories. Storing leftover marinade provides an easy way to quickly flavor future meals. The method advocates for proper spacing on skewers to ensure even cooking and using oil on grill grates to prevent sticking.
