Grilled Pesto Pizzas
Grilled Pesto Pizzas are made from a yeast dough topped with pesto sauce, feta cheese, and fresh tomatoes, then finished with dried basil, salt, and pepper. The dough is kneaded, divided into balls, and left to rise briefly before grilling. The pizzas get topped midway through grilling for a blend of smoky char and fresh toppings, creating a unique outdoor-cooked pizza experience.
Ingredients
For the Dough:
- 2 /4 ounce packets quick rising yeast (or 1/2 ounce)
- 1 1/2 teaspoons salt
- 1/2 teaspoon sugar
- 1 tablespoon olive oil
- 1 cup water hot
Mix together then add:
- 3 cups flour
Topping:
- 1 cup pesto sauce we use the big bottle from Costco
- 1 cup feta cheese tomato and basil flavor
- 4 tomato sliced
- basil to taste, dried
- salt to taste
- black pepper to taste
Instructions
- Knead dough for 1 minute then divide into 8 balls.
- Roll out into individual pizzas and layer on a plate divided by wax paper.
- Let dough rise for about 20 minutes.
- Grill on medium heat.
- After the first side is done flip and top with pesto and feta.
- When fully cooked, remove from heat and add tomato slices and season with basil, salt, and pepper.
Notes
- You can customize the pizzas with toppings such as roasted red pepper, nuts, goat cheese, sun-dried tomatoes, olives, anchovies, and capers.
- Adding a drizzle of balsamic glaze or topping with mushrooms, kale, or prosciutto can also enhance these grilled pizzas.
