Ingredients
For the Dough:
- 2 /4 ounce packets quick rising yeast (or 1/2 ounce)
- 1 1/2 teaspoons salt
- 1/2 teaspoon sugar
- 1 tablespoon olive oil
- 1 cup water hot
Mix together then add:
- 3 cups flour
Topping:
- 1 cup pesto sauce we use the big bottle from Costco
- 1 cup feta cheese tomato and basil flavor
- 4 tomato sliced
- basil to taste, dried
- salt to taste
- black pepper to taste
Instructions
- Knead dough for 1 minute then divide into 8 balls.
- Roll out into individual pizzas and layer on a plate divided by wax paper.
- Let dough rise for about 20 minutes.
- Grill on medium heat.
- After the first side is done flip and top with pesto and feta.
- When fully cooked, remove from heat and add tomato slices and season with basil, salt, and pepper.
Notes
- You can customize the pizzas with toppings such as roasted red pepper, nuts, goat cheese, sun-dried tomatoes, olives, anchovies, and capers.
- Adding a drizzle of balsamic glaze or topping with mushrooms, kale, or prosciutto can also enhance these grilled pizzas.
