Description

The Grilled Pesto Pizzas start with a quick-rising yeast dough combined with salt, sugar, olive oil, and hot water, then mixed with flour. After kneading, the dough rests to rise, developing a tender and airy base. Placed on the grill over medium heat, the dough cooks through, gaining a slight smoky flavor and grill marks. Servings

For the Dough:

  • 2 /4 ounce packets quick rising yeast (or 1/2 ounce)
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon sugar
  • 1 tablespoon olive oil
  • 1 cup water hot

Mix together then add:

  • 3 cups flour

Topping:

  • 1 cup pesto sauce we use the big bottle from Costco
  • 1 cup feta cheese tomato and basil flavor
  • 4 tomato sliced
  • basil to taste, dried
  • salt to taste
  • black pepper to taste

Instructions

  1. Knead dough for 1 minute then divide into 8 balls.
  2. Roll out into individual pizzas and layer on a plate divided by wax paper.
  3. Let dough rise for about 20 minutes.
  4. Grill on medium heat.
  5. After the first side is done flip and top with pesto and feta.
  6. When fully cooked, remove from heat and add tomato slices and season with basil, salt, and pepper.

Notes

  • You can customize the pizzas with toppings such as roasted red pepper, nuts, goat cheese, sun-dried tomatoes, olives, anchovies, and capers.
  • Adding a drizzle of balsamic glaze or topping with mushrooms, kale, or prosciutto can also enhance these grilled pizzas.
