Grilled Pistachio Salmon

Amazing melt in your mouth salmon grilled to perfection with the perfect pistachio glaze on top!

Ingredients

  • 6 (6-ounce) salmon fillets
  • 1 cup pistachios, chopped
  • 3 tablespoons lemon juice
  • ½ cup brown sugar packed
  • 1 teaspoon pepper
  • 1 teaspoon dill weed, optional

Instructions

  1. Heat a grill to medium-high heat.
  2. Combine the pistachios, sugar, lemon juice, dill, and pepper in a medium bowl.
  3. Spoon the pistachio mixture evenly over each salmon fillet. Press the mixture gently onto the salmon.
  4. Place the salmon on the hot grill. Cover the grill with the lid and grill the salmon for 5 to 10 minutes or until the fish flakes easily with a fork.

Notes

  • To grill the salmon, I used a grilling basket lined it with aluminum foil thensprayed it with cooking spray. The salmon was able to grill in the juices and I didn't lose any pistachios. It turned out amazing!
