Grilled Pork Chops with Greek Salad Salsa

You can make this fantastic meal in under 30 minutes. The pork chops get a boost of flavor from a fresh Greek salad salsa.

Ingredients

  • 4 ½-inch thick bone-in pork chops
  • ¾ teaspoon ground oregano
  • ½ teaspoon salt
  • ½ teaspoon ground pepper
The Salsa:
  • ½ cup diced English cucumber
  • ½ cup diced tomato
  • ¾ ounce kalamata olive quartered
  • ¾ ounce feta cheese crumbled
  • 4 basil leaves thinly sliced
  • ¼ teaspoon ground oregano
  • 1 teaspoon extra-virgin olive oil
  • 1 teaspoon balsamic vinegar

Instructions

  1. Preheat the grill to medium. Lightly coat the grill with oil.
  2. Season the pork chops on both sides with oregano, salt and pepper.
  3. Place the pork chops on the grill. Cook for 3 minutes on the first side, flip and cook until the pork chops are just cooked through, 2 to 3 minutes.
  4. Serve with the salsa.
The Salsa:
  1. In a medium bowl, stir together the cucumber, tomato, olives, feta, basil, oregano, olive oil and balsamic vinegar.
