Grilled Pork Chops with Greek Salad Salsa

You can make this fantastic meal in under 30 minutes. The pork chops get a boost of flavor from a fresh Greek salad salsa.

Ingredients
- 4 ½-inch thick bone-in pork chops
- ¾ teaspoon ground oregano
- ½ teaspoon salt
- ½ teaspoon ground pepper
The Salsa:
- ½ cup diced English cucumber
- ½ cup diced tomato
- ¾ ounce kalamata olive quartered
- ¾ ounce feta cheese crumbled
- 4 basil leaves thinly sliced
- ¼ teaspoon ground oregano
- 1 teaspoon extra-virgin olive oil
- 1 teaspoon balsamic vinegar
Instructions
- Preheat the grill to medium. Lightly coat the grill with oil.
- Season the pork chops on both sides with oregano, salt and pepper.
- Place the pork chops on the grill. Cook for 3 minutes on the first side, flip and cook until the pork chops are just cooked through, 2 to 3 minutes.
- Serve with the salsa.
The Salsa:
- In a medium bowl, stir together the cucumber, tomato, olives, feta, basil, oregano, olive oil and balsamic vinegar.
