Grilled Potatoes in Foil Packets

Grilled potatoes in foil packets are perfect for BBQ dinner or grilled meat. It’s super easy to assemble everything into foil packets and grill it over a fire, grill, or oven.

Ingredients

  • 1 lb small potatoes Yukon or red potatoes or a mix of both red and golden Yukon potatoes
  • 3 tablespoon olive oil
  • 2 tablespoon garlic minced
  • salt to taste
  • pepper to taste
  • 2 tablespoon fresh thyme finely chopped
  • 3 tablespoon fresh Rosemary finely chopped
  • 4 bacon strips cut into small pieces
  • 1 cup cheddar cheese
  • ½ cup Parmesan Cheese
  • 3 Cubes of butter optional
For Garnish -
  • Extra cheddar cheese for garnish
  • Sour cream for garnish
  • green onions

Instructions

  1. Dice potatoes into 1 inch cubes.
  2. Add diced potatoes, olive oil, minced garlic, thyme, rosemary, bacon, salt, pepper, cheddar cheese, and Parmesan. Mix well.
  3. Divide into 3 portions.
  4. Arrange potatoes on a large piece of greased foil.Pro-Tip: Place a cube of butter over the potatoes, before folding the wrap. Butter will give it a rich taste and potatoes turn more delicious! This is an optional step.
  5. Fold the edges to make a foil packet.
  6. Pierce a few holes into the packets to let steam out while grilling.
  7. Grill it on a campfire, BBQ, or in the oven.
  8. Cover the potatoes with a lid if you use the grill. The lid helps trap the heat inside and just cooks potatoes all the way through.
  9. Takes about 20 to 30 minutes.
  10. Once grilled, remove packets from fire.
  11. Open and fold the ends of the foil packs.
  12. Load it with green onions, cheddar and Parmesan cheese, and sour cream on the side. Serve it directly in foil packets.
  13. It serves great on the sides of grilled meat.
