Grilled Shrimp Foil Packets

Whether you are camping or cooking at home, these easy grilled shrimp foil packets with fresh corn and potatoes are a quick 30 minute dinner recipe.

Ingredients

For each Packet:
  • 5-7 medium sized shrimp (cooked and peeled)
  • 3-4 small red potatoes
  • 2-3 sliced pieces of corn
  • 2 tablespoons butter
  • 1 tablespoon SEASONING (recipe below)
Seasoning Ingredients:
  • 1 tablespoon onion powder
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon white pepper
  • 1 teaspoon thyme
  • 1 tablespoon paprika
  • 1/4 teaspoon rosemary

Instructions

  1. Heat the grill to 375 degrees.
  2. Poke the small red potatoes once or twice with a fork, then place them in the microwave for about 3-5 minutes. This allows the potatoes to start cooking and will ensure they are fully cooked when you remove them from the grill.
  3. Place a long piece of foil on your workstation and fold it in half width-wise.  Add the shrimp, corn, and potatoes to the center of the foil. Add in the butter and  of butter, and then sprinkle about a tablespoon of seasoning overtop. Cover the ingredients with the foil and secure packet loosely.
  4. Place on heated grill and cook for about 20 minutes or until heated through and the potatoes test done.
  5. Carefully remove from the grill and keep foil wrapped tightly until you are ready to serve.

Notes

  • The calories shown are based on 1 foil packet with all of the ingredients used. Since different size potatoes and shrimp have different nutritional information, the calories shown are just an estimate.
