Ingredients
- 2 pounds top sirloin steak cut into 1-inch cubes
- 2 tablespoons olive oil
- 1 tablespoon chili powder
- ¼ teaspoon garlic powder
- ¼ teaspoon onion powder
- ¼ teaspoon dried oregano
- ½ teaspoon paprika
- 1 ½ teaspoons ground cumin
- 1 teaspoon salt
- 1 teaspoon ground black pepper
- 1 red bell pepper cut into 1-inch pieces
- 1 yellow bell pepper cut into 1-inch pieces
- 1 green bell pepper cut into 1-inch pieces
- ½ red onion cut into 1-inch pieces
Avocado Chimichurri
- ⅓ cup olive oil
- 1 avocado
- 3 garlic cloves
- ½ cup chopped fresh parsley
- ½ cup chopped fresh cilantro
- 1 teaspoon salt
- ¼ teaspoon ground black pepper
- 1 tablespoon fresh lime juice
Instructions
- In a large bowl, add 2 pounds top sirloin steak cut into 1-inch cubes, 2 tablespoons olive oil, 1 tablespoon chili powder, ¼ teaspoon garlic powder, ¼ teaspoon onion powder, ¼ teaspoon dried oregano, ½ teaspoon paprika, 1 ½ teaspoons ground cumin, 1 teaspoon salt, and 1 teaspoon ground black pepper and toss until the meat is evenly coated in the spices.
- Thread the steak on the skewers, along with 1 red bell pepper cut into 1-inch pieces, 1 yellow bell pepper cut into 1-inch pieces, 1 green bell pepper cut into 1-inch pieces, and ½ red onion cut into 1-inch pieces .
- Grill the skewers over medium-high heat on the grill for 8-10 minutes until the meat is done to your liking. Remove the skewers from the grill and serve them with the avocado chimichurri.

- Add ⅓ cup olive oil, 1 avocado, 3 garlic cloves, ½ cup chopped fresh parsley ½ cup chopped fresh cilantro, 1 teaspoon salt, ¼ teaspoon ground black pepper, and 1 tablespoon fresh lime juice to a blender and blend until smooth.
